With the global spread of K-pop and Korean culture, Korean cuisine or "hanshik" is gaining new recognition. Korea's iconic foods, such as kimchi and traditional seasoning called "jang," are seeing increasing demands and enjoying an export surge.
Korean cuisine is now the mainstream of hallyu.
In that regard, Korea's signature fermented foods - kimchi, doenjang, soy sauce, and gochujang - needed to be presented as something different and exceptional in characteristics to other fermented foods in the west, such as cheese. Developed over a long period of time, Korea's fermented foods are not mere healthy cuisine, but an indispensable part of Korean culture.
This program explores Korea's four different fermented foods from the perspective of a foreign-born chef. He experiences the whole fermentation process and recreates "jang"-based dishes into something that even foreigners can enjoy. This is not a one-time hanshik promotion show, but a true vanguard of culinary hallyu.
