COVID-19 and fine dust have been major causes of respiratory diseases. This year, the Ministry of SMEs and Startups has accelerated support for the development of technologies that can reduce fine dust. Along with the spread of COVID-19, face mask has also been included in the category of strategic technology. And the support for the prevention of respiratory diseases has been strengthened. And a domestic company has developed Face Bio-Guard, which is an eco-friendly face mask substitute that is comfortable to breathe and harmless to the human body. Micro holes with a size of 5 micrometers are punched on a polyester material. Also, it can prevent fine dust particles and droplets which are bigger than 5 micrometers and it is more comfortable to breathe in comparison to the existing face masks that are made with non-woven fabrics. Moreover, a technology that can measure the fine dust concentration in real time has been developed. The concentration level can be checked only by filming the place that a person is standing for about three seconds. Fine dust concentration level can be measured with the AI-based algorithm as well as the image processing technology developed by the company. The result can form big data and provide a map on the fine dust level throughout the country. So people can get information on the fine dust level of the place they are standing and the surrounding regions. Fine dust particles and harmful substances stick to hairs, clothes and objects after going out. And a domestic company has developed an air purifier for doorways which can remove harmful substances. It can be installed at the entrance of the building. And when a person passes through it, strong whirlwind is made, so harmful substances can be removed. It has been installed to a variety of different facilities and it can contribute to reducing the damage caused by the spread of COVID-19. We introduce various technologies that can prevent respiratory diseases as well as realize clean and healthy environment.

Along with the confirmed cases of COVID-19, which is a coronavirus that has spanned the globe, strengthening immunity has emerged as a significant issue. And it has led to the sudden rise of molecular gastronomy. It refers to the process of analyzing food ingredients and transforming the texture in order to create new types of cuisines. A university laboratory has promoted researches that apply molecular gastronomy to traditional Korean food. The stew can be made when putting kelp, anchovy and soybean paste into siphon, which is a device that can brew coffee by applying vacuum pressure. The extracted soybean paste soup is whipped with lecithin powder. And the whipped soybean paste stew can be made. A growing number of attempts have been made in order to recreate traditional Korean dishes and popularize them to the world. Meat alternative has been in the spotlight as the food of the future. And a lot of experts have carried out researches to develop healthier meat alternatives. They have focused on the strength of molecular gastronomy which can transform the texture of ingredients while keeping the original tastes. And a meat substitute that can reproduce the original texture and taste of meat has been developed. Molecular gastronomy has been applied to the field of dessert. When pouring whipped cream into the liquid nitrogen with a temperature of 197 degrees below zero, it is hardened immediately and it turns into a shape of an ice cream. We look into molecular gastronomy, which has captivated the tastes of consumers by making them enjoy the looks and tastes of a variety of molecular cuisines.
