Food Tech: A new paradigm of the food industry
The convergence of food and scientific technology in the form of food tech is spreading throughout day-to-day life. O2O food services have demonstrated especially rapid growth. The global O2O food service market stands at 170 billion dollars in scale, and related start-ups have emerged to form a new industrial sector. Scientific technology is also being applied to cooking methods. Molecular gastronomy techniques such as the use of liquid nitrogen to instantaneously freeze ingredients have been developed, as well as 3D printers that create shapes in chocolate and robot chefs that cook, as a new food culture develops. With issues such as global warming, a decrease in the workforce and environmental pollution causing widespread concern, alternative future foods such as edible insects are in the works. Application of technology in food production is also making food tech a solution for food resource stability. A primary example is the smart farm, in which IT technology is used to control environmental conditions and standardize cultivation conditions to enhance productivity.
